    The Perfect Biscuit Recipe

    If you hate buttery, golden brown, flaky baked goods, then don’t make these. However, if you’ve been looking for the perfect biscuit recipe to impress your brunch guests, make your kids love you more, or satisfy your craving, then stop your search. This is the biscuit recipe to end all recipes. It is fast, easy, foolproof, and delicious.

    What do you love in a good biscuit? Those fluffy layers that are both light and rich at the same time. The key is actually stacking the biscuit dough to create layers, almost like a super easy laminated dough (as in croissants, Danish, etc.) I use a food processor, which makes throwing these together crazy easy, but if you don’t have one, a pastry cutter or two forks will work fine.
    Nothing like something homemade to make a weekend breakfast/brunch extra special!

    A recipe to make over and over again - perfect flaky, light, buttery biscuits

    Ingredients
    • 2 c all purpose flour
    • 1 ½ tsp baking powder
    • ¼ tsp baking soda
    • 1 tsp kosher salt
    • 1 tsp sugar
    • 1 ¼ sticks (10 tablespoons) of very cold butter, cut into ½” cubes
    • ½ c plus 2 tablespoons cold milk (I had 1%, but whole or skim works!)
    Directions
    • Step 1 Preheat the oven to 400*F.
    • Step 2 In a food processor, pulse the flour, baking powder, baking soda, and salt to combine.
    • Step 3 Add the cubes of cold butter and pulse the mixture until combined. The butter should be the size of beans and very crumbly.
    • Step 4 Transfer the mixture to a large bowl, and add the milk. Mix with a fork until a really shaggy dough starts to come together. Don’t overmix! (See pics above).
    • Step 5 Dump out the dough onto a lightly floured board, and using your hands, shape all of the crumbly dough into a mound, then use a rolling pin to get a flattened 1” tall square. Use the rolling pin to “shore up” the sides so that the square is even thickness.
    • Step 6 Cut the square into 4 equal pieces, then stack them all up.
    • Step 7 With lightly floured hands, pat the dough out again into a 1” thick square, and use a rolling pin to make it is even around the sides.
    • Step 8 Cut the dough into 8 rectangles/squares, and place them on a baking sheet lined with parchment paper, or sprayed with cooking spray (so they don’t stick!).
    • Step 9 Brush with 1 T of melted butter or milk for extra golden brown crispiness.
    • Step 10 Bake for 15-20 minutes or until golden brown.
    • Step 11 Enjoy, and try not to fight over the last one ☺

Rigorous vet checks before during and after ensure my equine partner is fit to continue. Conditioning for these rides/races is the BEST, miles and miles of challenging trails out in the wild to build up both of our fitness levels!
